Tuna Tartare by Cabillaud


ingredients:
- 160 gr fresh tuna
- 1 lemon
- Pepper
- Salt
- Olive oil
- 1,5 tablespoon of mayonnaise
- 1 tablespoon of wasabi
- 1 passion fruit
- 1 rice sheet
- Furikake


How to make it:
Cut the tuna into small cubes and season with lemon zest, pepper, salt and olive oil.
Mix the mayonnaise and wasabi.
Fry the rice sheet at 180C.
Now we can start plating:
Place the tuna nicely in a circle on the plate and sprinkle the furikake on top.
Scoop the seeds out of the passion fruit and spread them on top.
- Spread the wasabi mayonnaise on the rice sheet and sprinkle with furikake.
Place the rice sheet half on top of the tuna tartare.
