Tuna Tartare by Cabillaud

  • 160 gr fresh tuna
  • 1 lemon
  • Pepper
  • Salt
  • Olive oil
  • 1,5 tablespoon of mayonnaise
  • 1 tablespoon of wasabi
  • 1 passion fruit
  • 1 rice sheet
  • Furikake

How to make it:

  • Cut the tuna into small cubes and season with lemon zest, pepper, salt and olive oil.

  • Mix the mayonnaise and wasabi.

  • Fry the rice sheet at 180C.

Now we can start plating:

  • Place the tuna nicely in a circle on the plate and sprinkle the furikake on top.

  • Scoop the seeds out of the passion fruit and spread them on top.

  • Spread the wasabi mayonnaise on the rice sheet and sprinkle with furikake.
  • Place the rice sheet half on top of the tuna tartare.
